Mustard/ Mustard Maple Dressing

This is usually Alexandra's dressing of choice. I go heavy on the mustard and 1:1 vinegar to oil rather than the more typical ratios of 1:2 - 1:3.

Mix together (shake well) in salad dressing carafe or jar with cover:

2 T Dijon-style mustard (I use Grey Poupon)
1/3 c tarragon vinegar
1 t granulated white sugar
Pepper to taste
1/3 c olive oil


VARIATION: Mustard Maple Dressing

Replace sugar with 2 t maple syrup

November 2011: I served the salad at left at a dinner party last night and all the guests seemed to really like it.  I tossed baby greens with Maple Mustard Dressing, plated, then topped with Maple Walnuts and pomegranate seeds (dried cranberries would also work well).  See also Bitter Greens with Maple Mustard Dressing
