Mexican Pizza

This makes a great lunch - either on a (whole wheat) flour tortilla or flat bread. I sometimes make this on a whole wheat flax flat bread (as in the kind used for wraps) that I get at Whole Foods.

Place:
1 flour tortilla per serving

on baking sheet. Spread with

Black bean dip (I like Trader Joe's Spicy Black Bean Dip)

On top of the bean dip put, in this order

Grated or thin slices sharp cheddar cheese (Cabot's Hunter is my favorite)

Chili peppers, cored, seeded and cut in strips and/or
Sweet peppers (a variety of colors if possible)

Onions cut in thin rings

Broil 2-4 minutes, just until cheese is bubbly and edges of tortilla begin to brown.

Remove from oven and serve as is or top with

Avocado slices

Which have been sprinkled with:

Lemon juice
Cumin

AND/OR fresh corriander, chopped
