Cranberry Relish

Alexandra and Christopher made this every year just before Thanksgiving while they were at Lincoln Country Day Nursery School, bringing it home in a small paper cup. They also made it at home (upper right - November 1988) and in recent years Alexandra then Christopher made it with their younger cousin, Parker (lower left). We have gradually decreased the sugar amount over the years. Since the rind is consumed I always use organic oranges.

Grind in meat grinder:

4 c cranberries
1 orange (cut in eight sections)

Catch the liquid that drips from the meat grinder in a pan placed below the grinder. This is good for drinking or making popsicles (add sugar!) but don’t add to the sauce.

Add:

1 c sugar or less (add 1/2 c and then taste) to taste

Stir and refrigerate.
