Burritos

4 lunch servings, 2-4 dinner servings

4 large flour tortillas
2 cups refried beans, or black beans
1 t cumin
6 oz cheddar cheese, grated or thinly sliced with cheese shaver
OPTIONAL: 1 large tomato, chopped
OPTIONAL: 4 T chopped mild onion

OPTIONAL: ½ pound cooked steak, thinly sliced OR
½ pound Scrambled Hamburger

Mix beans and cumin and then spread ¼ of mixture on each tortilla

Sprinkle ¼ of cheese on each tortilla

Add any “optional” ingredients, divided over 4 tortillas.

Roll tortilla, tucking in ends and secure with toothpick

Microwave on high, approximately 90 seconds per burrito or until beans are warm and cheese melted. If all burritos are cooked at once, reposition every minute to insure they are evenly cooked.

After cooking, burritos can be temporarily opened and the following ingredient(s) may be divided among them:

2 cups of shredded lettuce
1 avocado, thinly sliced or 1 recipe of Guacamole (optional)
Salsa to taste
